Originally served by my corner coffee shop in Southwest Calgary, this is one of my favourite drinks! Jungle Java is long gone, but this drink lives on in my kitchen. Like an Ex, this espresso is bitter sweet.
Any espresso maker will do, but my favourite is the stove top espresso maker. It’s small size makes it perfect for small kitchens, and it makes a great, very traditional cup of espresso.
1 Shot of your favourite espresso
1 Tbsp Whipped Cream (See note on aerolatte whisk below)
1/8 tsp honey
Stove top Espresso Maker:
Fill the bottom compartment of your maker with boiling water to just below the little steam vent.
Place the little funnel inside, and fill with coarsely ground espresso beans DO NOT TAMP DOWN.
Screw on the top half of the machine tightly and simmer on medium low for about 5 minutes, until the espresso has bubbled up into the top compartment.
Assembling the Coffee:
Mix a small amount of honey into the espresso (I like a little less than 1/8 tsp, but it depends on the size of your cup)
Top with a dollop of whipped cream and enjoy!

It was a dangerous day that I discovered you could use one of these little guys to make a few tablespoons of whipping cream in under 2 minutes! Just put a little cream, vanilla, and your preferred sweetener into a little glass and whisk away! (It also works really well for salad dressing)
