We at the Compleat Cook feel it is high time that this fantastic fruit had it’s time in the spotlight! For years, a ferocious battle has been being waged over the internet; Avocado, good or bad? Well, have no fear, we have come up with a definitive answer! Good!…Usually…According to about half of us. Yes sadly our beloved avocado seems to evoke strong emotions from people. You either love it, or hate it.
Hopefully this months series of recipes will sway a few more people over to the “love it” side. Enjoy!
Avocado Fun Fact: Yes it’s a fruit!
Native to Mexico, this flowering plant bears the dense, buttery fruit we know and love. Although North America as a whole generally uses the avocado in savory dishes, many cultures ( Brazil and Vietnam notably) use it in their sweet treats.
Avocado Chocolate Mousse
Special Equipment: Food Processor
2 tbsp semisweet chocolate chips
2 very ripe large avocados, peeled and pitted
¼ cup maple syrup
¼ cup unsweetened cocoa powder
½ tablespoon pure vanilla extract
A pinch of salt
A pinch of cinnamon
Melt the chocolate in a double boiler, or the microwave (stirring often). Set aside to cool sightly.
Combine everything in a food processor. Blend until smooth and creamy, scraping the sides of the bowl as needed. Spoon into glasses and refrigerate for at least 3 hours (can be prepared 1 day in advance).
Make sure to blend the mousse completely smooth, you will really notice any chunks!
This is a very rich recipe, a little goes a long way! Serve along side any fresh fruit, raspberries are particularity nice.
