Dressing in a Jiffy!

One of my favourite weekday dinners is the clean-out-the-fridge salad. It’s a wonderful way to get a heaping helping of veggies, use up the bits and pieces that seem to accumulate in the fridge, and stay on budget all at the same time! Of course, being the gourmand that I am, I have to still have a bit of fun with the prep. This is where the salad dressing comes in.

Salad dressing is a great way to exercise a little spontaneity and flex those creative muscles. The risks are low, and the prep time is quick, just follow this basic recipe, and you’re pretty much guaranteed a tasty dinner!

  • ½ cup oil
  • ¼ cup acid (vinegar, citrus)
  • 1 tbsp sweet (sugar, honey, syrup)
  • 1-2 tsp mustard (this helps with emulsification)
  • Salt and pepper to taste
  • Any herbs or spices you like (the fun part!)

-When everything is in the cup, it should be about 1 part oil, and 1 part everything else.

-Toss everything in a measuring cup, and mix away!


-Your dressing will keep in the fridge for about a week.

*Note: if using fresh herbs, the dressing will only keep for a day or so.

If you’re looking for a place to start, here is my go to recipe: It seems to work with most salads I throw together, be them of the clean-out-the-fridge, or of the fancy-sit-down variety.

Nettie’s Dressing:

  • ½ cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp grainy mustard
  • Salt and pepper to taste
  • The zest of 1 lime
  • About ½ a nutmeg, grated
  • 1 clove of garlic, crushed
  • A dash of chili flakes
