Chicken Lettuce Wraps

These are a new favorite in my household that everyone enjoys and a great left over for lunch! This recipe is easy, you can use any vegetables you would like or have in your fridge.

  • Yields: 4 Servings


4 Small Chicken Breasts

1 cup diced celery

1 cup diced red pepper

1 cup cut snow peas

1 cup diced tomatoes

2 green onions - cut to size you want

1 cup chow mein noodles

1/2 cup hoisin sauce

1/2 cup peanut sauce

optional red pepper flakes

lettuce of your choosing


1Fry the chicken in a little oil until fully cooked.

2Add the celery, red peppers, snow peas, tomatoes, hoisin sauce and peanut sauce. If you have decided you want spice add the red pepper flakes.

3Just before you are finished cooking everything add in the green onion and chow mein noodles put the lid on the frypan if you want to cook the chow mein noodles or don’t cover them for a bit of crunch.

4Wrap the filling in lettuce leaves and serve.
