1Measure dry ingredients into a mixing bowl. Stir and make a well in centre.
2Whisk remaining ingredients in small bowl until smooth. Add to dry ingredients, whisking until smooth. Let rest 15 minutes at room temperature.
3Heat a small (8 inch, 20 cm) non-stick frying pan on medium. Spray with cooking spray.
4Pour approximately 1/4 cup batter for each crepe – immediately swirling to (lifting and tilting) to coat entire bottom of pan. Cook 2-3 minutes until top is set, loosen with spatula, flip and finish other side (1 minute).
