Exuberant Coleslaw

Big flavours for the perfect side dish!

  • Yields: 4-6


1/4 cup rice wine vinegar

2 tsp toasted sesame oil

2 tsp freshly squeezed lime juice

1 tbsp honey

1/4 tsp cayenne pepper

2 tbsp sesame seeds

2 carrots, peeled and coarsely grated

1/3 head purple cabbage, cored, & cut crosswise into narrow ribbons

1 yellow bell pepper, seeded & thinly sliced lengthwise

1 red pepper, seeded & thinly sliced lengthwise

1/2 medium sweet onion, finely sliced, rings separated

1 1/2 tbsp fresh ginger, peeled & finely minced or grated

1 cup cilantro leaves, chopped


1In a small bowl, whisk together rice wine vinegar, sesame oil, lime juice, honey, and cayenne. Set aside.

2Toast sesame seeds in a dry pan, over medium heat until lightly browned.

3In a large bowl, combine remaining ingredients and toss thoroughly. Then toss with dressing.

4Just before serving, toss with sesame seeds.
