Classic Veggie Kebabs

1Marinate zucchini, eggplant and bell pepper chunks in olive oil, thyme, rosemary and garlic.

2Skewer and grill, basting with lemon juice.

3Season with salt.

Vegetable Souvlaki

1Mash 3 garlic cloves, 1 tbsp each coriander seeds and olive oil, and 1 tsp each cumin, paprika and salt into a paste.

2Brush on zucchini, eggplant and bell pepper chunks.

3Skewer and grill.

Hoisin Tofu Kebabs

1Marinate cubed 'extra firm' tofu in 3 tbsp hoisin sauce and 1 tbsp each soy sauce, rice wine, honey and olive oil.

2Skewer with green onion pieces and grill
